Lenten cutlets from buckwheat

Cook boiled buckwheat porridge, that is, 2 cups buckwheat - 3 cups of water.

Peeled onion shredded finely and wessed in butter in a frying pan. Add the chopped mushrooms and, stirring occasionally, cook on low heat for 15 minutes. Add spices, slightly grease and cool. We rub the onion-mushroom mixture with a blender or let it pass through a meat grinder. Onion and mushroom puree is mixed with buckwheat porridge, we add garlic and well-ground greens. We pour in this mixture of flour and, if necessary, pour a little water.

With wet hands, we form cutlets, we pile them in flour or breadcrumbs. Now we can fry the cutlets in a frying pan, they are frying very quickly, so even with such a not-so-useful method of cooking, ready-made cutlets can be considered a fairly healthy meal.

It is even better to lay a baking sheet with oiled baking paper, put the cutlets and bake them in the oven for about half an hour.

Of course, for lack of mushrooms or unwillingness to use them in this recipe, you can cook cutlets simply from buckwheat with onions, which, of course, must first be finely chopped and salted, but only in this version without mushrooms.

We cook boiled buckwheat porridge (see above). Peeled potatoes are boiled with mushrooms in a minimum amount of water in a separate saucepan for 20 minutes. We extract the potatoes and mushrooms from the broth and cool them, then grind them with a blender or meat grinder. Mix buckwheat porridge with potato-mushroom mixture. Season with spices and add chopped shallow greens. For viscosity add flour and grated cheese, the consistency is regulated by the addition of potato-mushroom broth. We make cutlets, we pan in flour. Now you can fry buckwheat patties in a frying pan, but rather bake them in a fireproof form in the oven (see above).
