How to cook pancakes with mascarpone and berries?
Ingredients:
For the test:
- Wheat flour - 210 g;
- milk - 480 ml;
- eggs - 7 pieces;
- Vanilla sugar - 1 packet;
- salt - 5 g;
- granulated sugar - 35 g;
- oil for lubricating the frying pan;
For cream:
- cream fatty 33% - 200 ml;
- milk - 220 ml;
- yolks - 3 pieces;
- mascarpone cheese - 275 g;
- granulated sugar - 80 g;
- corn starch - 15 g;
- white chocolate - 90 g;
- espresso coffee - 60 ml;
- vanilla sugar - 15 g.
For sauce:
- berry mix - 320 g;
- granulated sugar - to taste;
- starch - 30 g;
- almond petals.
Preparation
The first step is to prepare pancakes. For this, we rub the eggs with sugar, vanilla sugar and a pinch of salt. Pour in the milk, stir and pour the sifted flour. We make the dough consistency, like liquid cream and let stand for twenty minutes. Then bake thin pancakes, very little oiling the bottom of the frying pan.
Now we need to make a custard for a pancake cake. To do this, we rub the yolks with sugar and starch. Then heat the milk to a boil and in a thin trickle we introduce into the yolk mass, stirring. Again, heat the mass on the fire until thick and cool at room temperature until warm. In the meantime, we'll make coffee.
Mix the custard and coffee, add the melted white chocolate on the water bath and enter mascarpone, laying it down a little with a spoon and stirring.
Cream whisk to a thick thick foam and gently moving from bottom to top we inject into the cream.
Now, pepper every pancake with cream and collect the cake. We leave the top pancake dry. Determine the dish in the refrigerator for seven to ten hours.
For an hour before serving, we take out the cake from the refrigerator, and a little earlier we will prepare the berry sauce. For this, berry with sugar is cooked for about ten minutes and broken with a blender. Then add the starch, diluting it beforehand in a small amount of water, and warm up until thick.
Let the sauce cool down, cover it with the top of the cake, decorate with berries and sprinkle with almond petals.
Chocolate pancake cake

- baking powder - 12 g;
- cocoa powder 100-120 g;
- Vanilla sugar - 25 g;
- salt - 3 g;
- granulated sugar - 85 g;
- vegetable oil - 70 ml;
For cream:
- cream fatty 33% - 350 ml;
- powdered sugar - 130 g;
- sugar vanilla - 10 g;
For decoration:
- fresh berries or fruit;
- chocolate melted - 100 g.
Preparation
