How to cook a balyk from pork?

First of all, you need to choose meat. The best thing for a balyk is a pork neck, this part is more oily, therefore, and the meat will turn out juicier. We marinen our piece in spices, just do not overdo it, so that it retains its taste, and we send it to the oven for a couple of hours. If you have not previously put pork marinated, for 10-12 hours, let it stand at least an hour or two, then the balyk will turn out to be more fragrant, soft and tender.

We rub the washed meat with salt, pepper, ginger and nutmeg and leave it for the night to marinate in the refrigerator. Then we shift the pork balyk into the sleeve for baking and tie it well. We bake the meat in the oven at a temperature of about 170 degrees an hour and a half. 10 minutes before the end of the pork balyk preparation, cut the package with scissors, open it and squeeze garlic into the meat. If you like garlic flavor and aroma, you can pre-bite a piece of garlic. When it is ready, let it stand for 10-15 minutes in the oven and let it cool down.
