In such dishes, of course, it is good to combine ribs with other ingredients, namely: with different vegetables.

Ribs are cut into pieces, convenient for eating. Prepare marinade from lemon juice, chopped garlic and dried ground spices, let it stand for 20 minutes and strain through a strainer. Salting marinade ribs, a little bit and we will leave for 1-4 hours.

We will cut the onions into semi-rings, sweet pepper - straws, and eggplants and tomatoes - cubes (eggplants should be held in a bowl with cold water for 10 minutes, then water with salt).

We'll extract the ribs from the marinade and dry it with a clean cloth. Well we will scorch a deep frying pan and will pour oil. Roast ribs on high heat to create a beautiful ruddy golden crust. Now we put all the cut vegetables into the frying pan except tomatoes and fry for 5-8 minutes, stirring, then add the sliced ​​tomatoes, pour a little water, reduce the fire and gently mix.

Cover with a lid and stew, sometimes stirring, for about 40-50 minutes. Ready lamb ribs with vegetables are served with boiled potatoes , beans, peas or chickpeas and greens, lavash or flat cakes. You can separately serve some hot sauce, red table wine, grape brandy or rakia.

Approximately following the same recipe, you can cook pork or veal ribs with vegetables - the cooking time of these types of meat is approximately the same.

We will warm up the oil in a frying pan and fry the ribs together with the addition of onions and carrots. We will reduce the fire to the weakest and infuse some water. We put everything under the lid, sometimes stirring, for 1-2 hours (depends on the softness of meat and the age of the animal). Approximately 20 minutes before the final readiness, we put the potatoes cut into large slices. We add the desired amount of water, add spices, slightly grease and stew until done (minutes 20-25). You can if you want to add a little diluted with water tomato paste (it, however, an optional component).

Before serving, sprinkle a little with ground black pepper, as well as chopped herbs and garlic. This dish is good to serve vegetable raznosoly: sauerkraut, pickled cucumbers, mushrooms, vodka, strong bitter or berry tinctures and rye bread.
