Take 1 kg of fresh home-made cottage cheese, break it with your hands into pieces and add 1 tbsp. l. salt. Now the resulting mass should be wrapped in gauze and placed in a small container (by the volume of cheese) with a fairly wide throat, since on top of it you need to place a press. If you chose a small saucepan, pick up the lid, which is even smaller in diameter, from above place a three-dimensional pan filled with water. Hours after 5 separated liquid must be drained, change the cheesecloth, which is cottage cheese, and put it under an even heavier press, for a day. After the extra liquid from the cheese comes out, the resulting mass should be placed in a cool place or a refrigerator of the week for two, for maturing. Delicious cheese is ready!
