Recipe for house wine from black chokeberry

As for any wine, not all the fruits can be used during cooking. Before starting to use ashberries are sorted out, getting rid of damaged and spoiled berries. After, all the berries are washed, dried and are taken to prepare the used capacity. The purity of the fermentation tank is the guarantee of a tasty and properly prepared wine, therefore in order to get rid of extraneous microflora, the containers are usually washed with soda and additionally scalded.

If you decide not to use raisins or special wine yeast, then before you cook the wine from the aronia, do not wash the berries themselves to preserve the natural wild yeast on the surface. Pour the berries into prepared containers and fill all with sugar (750 g will be enough). Pound the ingredients with a pestle, trying to break the integrity of each berry. Then the resulting gruel is poured with a liter of water and sent to fermentation. Before the first signs of fermentation, the pulp on the surface should be mixed once a day so that the surface of the berries does not become moldy.

When the fermentation begins, the mash is thrown back on the cheesecloth and very carefully squeezed. The juice is poured into a clean bottle for further fermentation. The remaining cake is poured with a liter of warm water and mixed with the remaining sugar. This mixture is left for a week, also stirring daily. The juice obtained earlier is left under the water seal. After a week, the foam is removed from the juice surface under the bolt, mixed with the second portion of the juice, after having filtered it, and leave the can under the bolt for another 30 days or until the fermentation is complete.

The preparation of the wine from the black chokeberry is almost complete, it is enough just to filter it, sweeten it or fix it with alcohol, if desired, and leave it to cool in at least a month.

A simple recipe for wine from apples and chokeberry

Razumnite ashberry with a kilogram of sugar and add to the gruel pieces of apples. Fill a prepared 10 liter bottle with the mass, and pour in so much water that the liquid will fill approximately 2/3 of the volume. Tie the neck of the container with gauze and leave the drink for another 3 weeks. The remaining sugar is divided in half and add at the end of 2 and 3 weeks of infusion. Do not forget to mix the contents of the bottle daily so that the surface does not become covered with mold. Next, the wine is insisted until the sixth week, filtered from the pulp and left under the bolt until the fermentation is complete. The finished drink is further filtered and tasted.

Wine from the juice of chokeberry with vodka

Since the berries themselves are not too sugary, they are reluctant to wander, from that drink often lacks a fortress and it can quickly deteriorate. When preparing dry wine, this can be avoided by additionally fixing the resulting wine with vodka, or using a simple express recipe.
