Apricot filling without vodka

Cooking can be done in two ways: with the direct addition of alcohol to the fruit juice or by natural fermentation. In the latter case, the technology of cooking resembles that of wine , but for the recipe itself, only fruits, sugar and some water will be needed. About the preparation of the drink through fermentation, we will tell on the example of how to make apricot liqueur at home.

Washed and dried apricots clear of pits. It is the fetus's bones that contain a high amount of poisonous hydrocyanic acid, so it's better to forget about the aromatic filling on apricot bones. Cut the flesh arbitrarily, but not too finely.

Prepare a simple sugar syrup by combining the sugar with water and boiling the solution for a couple of minutes on medium heat, removing the foam from the surface as needed. Ready syrup should be cooled, after which they can pour apricot flesh. The container in which you decided to do the filling, cover with gauze and leave the drink to wander in the dark at room temperature. A couple of days, and the start of fermentation will be felt by a frothy cap formed on the surface of the drink. Afterwards, the gauze cover on the neck of the container should be replaced with a conventional latex glove with a tiny hole, an alternative option is a hydraulic seal. Return the container with the drink to the previous one place and expect the end of fermentation, the evidence of which will be a blown glove and the cessation of gas formation, the approximate period varies within the framework of 20-40 days.

Half finished beverage is gently poured into another bottle, trying not to raise the sediment from the bottom. If necessary, the filling can be passed through a cotton-gauze filter to get rid of the suspension. Hermetically close the container, put it in the cool and let the drink ripen another month. If the pouring is still turbid, then in the middle of the ripening period, it can again be passed through a cotton-gauze filter.

Ready-made apricot liqueur without vodka will have a pleasant orange color and pronounced sweetness. The drink can be kept cool for up to two years.
