Assorted cucumber and tomato

Perhaps the most popular harvest for the winter are tomatoes and cucumbers. A mixture of these two fruits, in addition to spices and sour marinade, is used as a traditional winter addition to hot dishes, like a cold snack or ingredient for a sandwich. About the preparation of this assortment and its conservation, we decided to talk further.

In a clean and dry jar with a volume of 3 liters we lay the sprigs of dill and sliced ​​horseradish. Cucumbers, we dry, cut edges. Tomatoes are also mine and dried, not forgetting to tear off the remains of the peduncle. At the bottom of the banks first lay out cucumbers, followed by pieces of garlic, bay leaf and rings of onions. In the kettle boil the water and bred in it salt and citric acid. Fill tomatoes and cucumbers with the resulting solution and put sterilized in an oven or a water bath, covered with lids. Sterile cans are rolled up and left to cool under the blanket in an inverted form.

Cucumbers and tomatoes are dried and dried. We cut vegetables with large rings and lay them in cans, alternating with parsley. We boil water and dissolve salt in it with sugar, add vinegar. Fill the hot solution with the contents of the cans and cover them with lids. Sterilize and roll up the jars. Before placing the preservation for storage, cool it under the blanket in an inverted form.

All vegetables are well washed and dried. Carrots with onion cut rings, and cucumbers with tomatoes leave whole, only cutting off the remains of peduncles if necessary. We sterilize the cans in pairs or in the oven, after which we layer the vegetables with greens in them, do not forget about laurel and pepper, and then pour boiling water mixed with salt and vinegar.

Marinucing cucumbers and assorted tomatoes

Tomatoes are mine, dried and nibbled at the base with a fork or toothpick (so as not to chop with boiling water). Carrots mine or carefully brush with hot water. We chop the sweet peppers into large slices, not forgetting to remove all the seeds beforehand. We chop the onion with large rings, and leave the whole pepper and garlic cloves.

We impregnate all the ingredients in clean steamed jars and fill them with boiling water. After 30 minutes merge the excess liquid into the pan, dissolve salt and sugar in them, dilute the vinegar and bring the marinade to a boil. With a hot marinade we fill the vegetables and herbs in the jars, and then roll them up and leave them to cool under the blanket in an inverted form. After cooling, assorted cucumbers, tomatoes and peppers can be stored in a cool place where they will successfully stand the whole winter.
