Thanks to the modern variety of recipes and conservation techniques, variations in each of the usual blanks can be counted in dozens. Not an exception is also currant jam. In modern recipes, sugary sweetness and a viscous consistency have receded into the background, they have been replaced by the pronounced taste and benefits of the finished product. After picking berries, having cleared them from the remains of pedicles and rinsing well, proceed to grind them. Pure currants can be without problems in the meat grinder, and if you need to get rid of the smallest remnants of peel and bones, just wipe the mashed potatoes through a sieve.

Pour sugar and mix to ready berry puree. After covering the jam, leave it to stand until the sugar crystals are completely dissolved, stirring occasionally.

We do not need to sterilize the jam, of course, we are doing absolutely crude product, but sterilization of containers and lids is absolutely necessary. After preparing sterile containers, fill them with jam, roll up and store the currant with sugar without cooking in the cold.

If you intend to leave the currant to be stored at room temperature for the whole winter, or even for a whole year, then much more sugar, about 2 kg to 1 kg of berries, will be required. Thanks to the high concentration of sugar, such a product will remain on the shelf even without sterilization, although it will be necessary to take time to infuse the product before canning.

Fill the currant with granulated sugar in enamel or glassware. Peel the berries with a wooden pestle until you break the integrity of each of the berries. Cover the container with a future jam gauze and leave it for at least two days at room temperature. This time is necessary not only to completely dissolve the sugar crystals, but also to ensure that the product does not ferment during storage.

When there is no sugar, raw black currant jam is poured over the sterilized jars, a couple of centimeters of sugar is poured over the top and covered with all the scalded lids.

Such a product will not only be an excellent winter delicacy, but will also help fight the first signs of a cold, and will also supplement the need for vitamin C.

Technically, this recipe can not be called completely raw, but we will cook here not the berries themselves, but only currant syrup. Sugar in this case, you can add less, and the product will easily survive the whole winter and retain most of its vitamin benefit.

Fill berries in enamelware with sugar in a 1: 1 ratio. Cover the container with the future jam gauze lid and leave in the cold for half a day. After a while, drain the separated syrup, place it over the fire and cook for about 5 minutes after boiling. Spread the berries on sterile jars and fill with hot syrup. Immediately close the jam with scalded lids. It is not recommended to roll up cans with standard metal covers, as vitamin C is destroyed when it comes into contact with the metal. It is for this reason that it is also forbidden to use metal utensils while preparing the ingredients.
