From cod it is possible to prepare various dishes and, certainly, it is better to apply healthy methods of thermal processing, namely: to cook, cook on pair or bake.

Since the size of the cod carcass can reach fairly large sizes (in the fishery, individuals with a length of 40-80 cm in length predominate), it can be prepared entirely in the form of carcasses without a head, in the form of steaks, in the form of separate side fillets or in the form of portioned fillets .

We put 2 cloves of garlic and pour 2 tablespoons of wine - let it be insisted.

Onion cut into thin circles, by which we lay the bottom of the refractory mold, we first lubricate its bottom (or we cover the pan with foil and make onion on top, again first we lubricate the surface). From the top on the onion substrate lay cod steaks (of course, the fish must be previously thawed, washed and dried with a napkin).

Make the sauce. Mayonnaise (cream or sour cream) season with ground black pepper and nutmeg. Filter the garlic-infused wine through a strainer and add it to mayonnaise. We also pour a little lemon juice.

Evenly distributing, pour this sauce on the fish substrate.

We cook the cod in the oven, that is bake in the oven for about 20-25 minutes (the optimum temperature is about 200 ° C). If you want ruddy shades, do not cover the shape, if you want the fish to steamed, choose a deep form with a lid (or use a foil instead of the lid).

Ready to baked the cod lay out on the serving dish along with the garnish (it can be potatoes, rice, string beans, polenta, etc.).

We peel the potatoes and cut them into circles, onion - half rings, sweet pepper - straws, and broccoli we will disassemble into small cots.

Broccoli blanch, that is, pour boiling water in a separate container (better thick-walled ceramic) for 8 minutes, then salt water. Potatoes are cooked in a separate saucepan for 12-15 minutes, water is added.

Cooking in deep form with a lid. We spread the bottom with oil and spread the potato slices. Next, lay the sliced ​​sweet pepper alternately with onion and broccoli.

Evenly distributing, watering the vegetable substrate with a creamy sauce (cream + spices and chopped garlic), we do not spend the entire mixture, only 2/3. On top of this substrate lay the whole side fillet of cod. Or cut the fillet into small portions. Pour the remaining creamy sauce. Cover the form with a lid or foil. Bake in the oven at minimum temperature for 30-40 minutes.

Remove the lid or foil from the mold, you can sprinkle with grated cheese. Ready-baked cod with vegetables, without removing from the form, decorate with greens and serve to the table. Portions extracted with a shovel, if baked whole filet, you can gently cut it into pieces, without violating the composition of the dish. It turned out an excellent dietary dinner, to which it is not bad to serve a little table white wine.
