Curd cake according to GOST

Many confectionery enterprises (at least in the Russian Federation) bake cottage cheese muffins in accordance with GOST recipe. We will learn how to bake a delicious curd cake with a GOST recipe. Well, let's just say, with minor changes and improvements, yet margarine (laid out according to GOST) is very harmful, we replace it with butter, and we also include a little rum or cognac in the test - this improves the baking texture.

Raisins steamed with boiling water in a separate bowl, after about 10 minutes of water drained, washed again and thrown on a sieve. Cottage cheese mash with a fork or rub through a sieve. Razirayem almost all the sugar with butter, add to the bowl with cottage cheese and mix. We add egg yolks. Egg proteins with the remaining sugar will be picked up by the mixer until stable peaks. Add the flour, quenched with lemon juice to soda, salt, rum and whipped proteins, into a bowl with a curd-oil mixture, and mix until homogeneous. We knead the dough, add the raisins, mix it, but do not mix it for a long time.

The dough is placed in a greased form (silicone is more convenient, they can not be lubricated). The form should not be filled completely, because during the baking process the cake "grows".

We bake the curd cake in the oven at a temperature of up to 220 ° C for about 50-60 minutes. The cupcake is determined by smell, visually and by puncturing a match in the middle, it should remain dry. We extract by turning over on a dish, if the cake does not immediately come out of the mold, we put a wet linen napkin on the bottom of the inverted form.

From the lemon juice and powdered sugar, you can make the glaze and pour it over the surface of the cupcake (or, rather, cover it with a silicone brush). You can make other glazes, creams and sprinkles or do without special frills.

Cottage cheese cake with apples can be baked, following about this recipe as a base.

Preparation

Raisins are not needed. Mix the dough according to the basic recipe (see above). 1-2 apples quickly cut into small slices and add to the dough. Stir, fill the form and bake.

To bake a curd- banana cake, add the pulp of 1-2 mashed bananas to the mashed potatoes prepared in the basic recipe. Or cut the banana into pieces, round slices and put them on top of the dough. To banana is not dark, sprinkle with lemon juice.

Other options

In the same way, you can prepare a dough for cupcakes using other fresh fruits or dried fruits. Dough fruit syrups or thick fruit juices can be included in the test.

The composition of the test can include cocoa powder mixed with sugar, cinnamon or vanilla - you will get a chocolate cottage cheese cake. Such a cupcake will be covered with chocolate icing and sprinkle with grated chocolate.

We serve cottage cheese muffins with tea, coffee, hot chocolate or rooibos, preferably in the morning.
