Volovany - a dish that came to us from France, in which it is a very popular form of serving expensive dishes. Volovan is a basket made of puff pastry, which is served with caviar, meat and fish dishes, salads, and sometimes desserts. This is an excellent replacement for tartlets: these light baskets are much more tender, they perfectly set off the taste of the dish itself and are very easy to prepare. In addition, the volosts can be prepared in advance, they are stored in a frozen form, and the shape can be thought up any: the worms are round, oval, square, rectangular, high and low - as fantasy tells.
How to prepare worms?
Loving the puff pastry is very easy to prepare.
Ingredients:
- 1 package of a yeast puff test 0.5 kg;
- 1 chicken egg;
- parchment;
- a glass with a diameter of 6 cm;
- glass with a diameter of 4 cm.
Preparation:
Dough for volovanov need to be thawed and divided. If it was sold in packs, just remove the film as the dough thaws. If the dough was sold collapsed, the roll should be carefully unfolded and cut into convenient layers for work. The dough is not rolled out and is not dusted with flour. The pan is covered with parchment, the oven is heated to 200 ° C. We cut out circles from the layers of the dough with the help of a large glass. Half of the circles are laid on a baking sheet. From the second half, using a smaller glass, we cut out the centers. We roll them up to the diameter of the circles on the baking sheet. We will get 3 types of blanks: originally cut circles, rolled circles and puff pastry rings. Separate the yolk from the protein, whisk together. Lubricate the first circles of whipped protein, put the rolled circles on them, again lubricate with protein and lay the rings from the dough. How to bake volovany, so they turned out beautiful, golden, appetizing and crunchy? Lubricate the collected volosts with beaten yolk and send it to the oven for 15 minutes. Volovany blushed - then they are ready. Cool and fill with any filling.
Wolves with chicken and prunes
The simplest option is wolves with chicken. You can use chicken cooked, fried or smoked, it depends on taste and preferences.
Ingredients:
- 200 g of boiled chicken;
- a handful of prunes;
- 4 walnuts;
- 1 tbsp. spoon of mayonnaise;
- leaf salad.
Preparation:
Boiled chicken breast cut into pieces. Prunes soak in warm water for 2 hours, remove the stone, cut into thin strips. Nuts are calcined in a dry frying pan, cut into small pieces with a knife. Salad washed, let it drain off water, cut into thin, short strips. We connect everything, fill it with mayonnaise and put it into the cooled volovany. Volovany with stuffing from chicken and prunes to serve better immediately, until the dough is soaked from the sauce.
Volovany with caviar
The real decoration of the New Year's table will be red wool with red caviar. To feed this delicacy, worms choose small, not very deep. In the cold volovany, put frozen butter with a thin curl, spread half the teaspoon of red caviar over the oil. If this dish seems expensive, you can put a salad with shrimps in your hair foliage, and decorate each basket with a few eggs.
Snack with seafood

Ingredients:
- 1 pack of puff pastry;
- 1 raw egg;
- 100 g of butter;
- 200 g of shrimp;
- 4 boiled yolks;
- 2 sprigs of dill;
- salt - to taste.
Preparation:
From the puff pastry bake, as described above. Prawns cook until cooked and cleaned. 10-12 shrimps (according to the number of volovany), we postpone the rest with a blender together with softened butter and yolks. Add salt and finely chopped dill. Transfer the resulting mixture into volosts and decorate each with a whole shrimp. This dish should be served chilled.
Volovany with mushrooms
Tasty and volovany with mushrooms.
Ingredients:
- 1 kg of champignons;
- 1 onion;
- 30 ml of vegetable oil;
- 200 g thick cream;
- 50 ml of white wine;
- salt, spices - to taste.
Preparation:
Mushrooms shall be washed and peeled, cut into medium-sized slices and fried in vegetable oil until golden, add the onion, whiten almost until cooked. We poured a white table wine, add salt and ground black pepper. When the wine is evaporated, add sour cream and protushim 5 minutes. Cooled mushrooms put in volovany and immediately served.
