At the end of the time, add the raspberry starter to the apricot compote , which can previously be sweetened at the rate of 200 g of sugar per 3 l of compote, stir and leave to ferment for 7-10 days. After a week, the liquid is filtered and poured over clean bottles, we add a little honey for flavor and leave to be infused for another 1.5-2 months. Young wine again filter, dispense and leave for another month.

Wine from sour strawberry compote

In the fermentation tank, pour the sour compote, add honey and a little rice. Rice grains in this case will act as a source of fermenting microorganisms, like raisins, or raspberry berries. We close the container with a water seal, or put a glove on the neck. Leave the workpiece for 4 days, until the fermentation process is completed. Then filter the young wine through gauze, pour on clean bottles and leave to mature for 1.5-2 months, after which you can take a sample.
