Under the meaningful name of "hrustiki" there is a semblance of the familiar brushwood that we all know. Crunch can be prepared on a different basis, and therefore differ in texture and taste. Light and airy sweet crunches with powdered sugar or crispy bits of beer-based dough - we'll look at all the possible recipes.

We beat eggs with sugar and white-salt. We add kefir to the eggs, the amount of the latter can depend on the size of the eggs, so it may be needed as more or less. Now we sift the flour and mix it with soda. We pour the flour in portions to the egg-kefir mixture and mix a very thick but sticky dough. We divide the dough into two parts, each of which is rolled into a thin layer. We cut the dough into rectangles, in the center of each we make a vertical incision and pass through it one of the ends of the dough. Fry the hrustiki in preheated vegetable oil until golden brown.

Crisps, according to this recipe, can be prepared and on sour milk, the result will be similar. Due to lactic acid, which will extinguish soda, the dough will turn out to be airy and light.

Beat eggs with yogurt and sugar until smooth. Add the mixture of vodka, salt and sifted flour. The resulting dough should be thick and dense enough. We sift the flour and mix it with salt, paprika and hot pepper - this is the basic set of spices, so if you want to add crunches with a mixture of dried herbs, dried mustard, garlic or ground coriander - safely improvise. After the dry ingredients are mixed, pour into them 1/2 cup vegetable oil and grind everything into a crumb. Mix the flour with 2/3 cup of beer and knead a thick, but elastic and homogeneous dough for 5-7 minutes. Let the test rest 10 minutes under a damp towel, and then divide it into 2-3 parts and roll it into a thin layer. We cut the dough into rectangles, in the center of each rectangle we make a longitudinal incision and pass one of the ends of the dough into it. Fry sharp crunches in warmed vegetable oil, absorb the remaining fat with paper napkins and serve a snack to the table yourself or accompanied by your favorite sauce. Bon Appetit!
