Beginning to pickle her turkey, of course, you must first rinse. For marinade in one liter of boiled water, we dissolve sugar and salt, throw peas of coriander, cinnamon stick, laurel leaves, boil for about a minute and add another three and a half liters of already cold water. Mix the resulting brine, add peeled and sliced ​​onions and carrots and immerse the resulting carcass of turkey. Marinade should completely cover the bird.

The amount of ingredients in the recipe is indicated for a turkey carcass weighing about five kilograms. If the carcass of the turkey is larger, or the volume of the vessel in which it will be marinated will require more liquid, it is necessary to prepare an additional portion of the marinade.

In order to maximally improve the taste of the ready-made dish, it is necessary to keep the carcass of the bird in the marinade for at least two days. At the same time we place a vessel with a turkey in a cool place at a temperature of no more than five degrees above zero.

We mop the carcass from the moisture with paper towels, grease with a soft butter, pre-mixed with ground black pepper and put the breast up on the baking sheet, which is pre-lined with several long enough foil sheets.

We dip the orange into boiling water for a couple of minutes, and then wipe it dry and clothe the buds with carnations, that is, simply insert them into the fetus. We peel the garlic head from the upper husks and, without looking at the teeth, cut it into two parts.

Orange with cloves and garlic is placed inside the bird, and then turn the sheets of foil and seal them as tightly as possible.

We cook the turkey for the first thirty minutes at maximum temperature, and then reduce it to 180 degrees and bake four hours. After that, we raise the temperature regime again to the maximum, turn the foil completely off and let the bird become brown for thirty minutes.

To prepare the marinade, mix all ingredients from the list of ingredients and let them stand for ten minutes and exchange their tastes. This marinade is suitable for soaking the portioned turkey slices. In them it is first necessary to make deep punctures with a knife, for better penetration of spicy liquid into fibers. After the turkey pieces are completely greased with marinade, let them stand for three to seven hours for diffusion, and then we can proceed with further cooking. It is ideal to bake such a bird in the oven, but you can fry it, and then put it in a frying pan.

To make a delicious marinade for a turkey, add the herbs, paprika, pepper and salt to the yogurt, squeeze the garlic cloves through the press, add the cleared apple cut into small pieces and mix. We immerse the slices of turkey into the resulting kefir mixture and leave it in the marinade for seven hours.
