Pie with cabbage and fish

Pies with cabbage and fish from yeast dough - traditional pastries in culinary traditions of different peoples. Such pies are especially good for the cold season, and cabbage can be used, both fresh white and leavened (of course, in this version it should first be thoroughly rinsed).

Pies with cabbage and fish can be made from different types of dough, for example, from puff pastry (it's good to make small pies) or from kefir dough. The dough can be bought in supermarkets, gourmet kitchens or catering establishments or done by yourself (which, of course, is preferable, so you will be sure of the products used to make it).

The recipe for an open pie with cabbage, rice and fish

Peeled onion and chopped cabbage, stew in a cauldron until cooked. Boil washed rice without mixing, and merge excess liquid. You can rinse with boiled water if the rice is not crumbly.

Fish fillet is thawed in a colander and in parallel we prepare the dough. Mix slightly warmed milk with 2 tablespoons of flour and sugar. Add yeast and softened butter. Stir and put in heat for 30 minutes. At the end of this time, add eggs and sifted flour to the pan. Knead and carefully knead the dough with your hands, then put in heat for 30-40 minutes. We knead and stir. Repeat the cycle twice.

Fish fillet cut into small oblong slices (strips). A little podsalivaem, sprinkle with lemon juice and season with dry spices. After a while, we drain the juice.

The dough is divided into two unequal parts. From a larger coma roll a round flat cake of medium thickness. Spread it on a baking sheet, oiled (you can spread it with oiled baking paper). From the smaller part we roll out the "sausages", from which we make the border and the strips for the "lattice". We spread on the dough first rice mixed with cabbage, and on top - pieces of fish and greens. We perform the "lattice". Now open the pie with cabbage , rice and fish, put in the oven, heated to a temperature of 180-200 degrees C. We bake the cake for about 25-30 minutes. Finished pie with egg yolk.

The cake can be served both warm and cold.

Fast pie with cabbage and fish on yogurt

Ingredients:

We mix eggs with yogurt, salt, soda and lightly blow out. Gradually adding the sifted flour, kneading the dough with a density about like a pancake.

For the filling, we wash the cabbage and put it back in a colander, we cut the onions into quarter rings, and the fish - with small oblong pieces (if canned, then we break it). All the mix.

We shall lubricate the refractory mold with oil. Half of the test lay out (or rather poured) in the form, then - the layer of the filling. Lightly pepper, sprinkle with chopped herbs, then - the top layer of the dough (slightly thinner than the backing layer).

Bake the cake in the oven for about 25-30 minutes at medium temperature. Finished pie with egg yolk.
