Usually the preparation of pelmeni begins with a dough. But we will do differently and make first the filling, in order to give it the opportunity to brew. So, the washed and dried pulp of beef and pork is cut into slices and processed with a meat grinder. In the same manner, we refine the peeled bulbs and cloves of garlic. We fill the ground mixture with salt and ground pepper, pour in a glass of ice water, mix thoroughly and put in the refrigerator, covering the container with a lid.

Without wasting time, we take up the most delicious dough for home-made dumplings. Eggs stir with a fork or corolla until uniform, combine with warm water, podsalivaem and poured into a container with pre-sifted flour. We make kneading, achieving a dense and non-sticky texture of the dough, if necessary for this, pouring a little more flour.
