Rowan billets appear on our shelves not less often salted vegetables and berry jam, but few know about this method of storing this berries, as its use as a basis for wine making. We decided to make recipes for delicious rowan wine to the masses.

Recipe for wine from red ashberry

Before preparing home wine from red ashberry, it is necessary to pour berries into a container and leave in the cold for a day to get rid of excess bitterness. Before cooking, the berries are thawed, grinded in a deep bowl to the state of mashed potatoes, then add half of all sugar and a mixture of water and apple juice . To strengthen the fermentation in a container with a future wine lay a couple of handfuls of black raisins . Washing berries before this is strictly prohibited, otherwise you will kill the microflora providing fermentation.

Further, with rowan wine, the same applies as with wine from any other raw material - it is put on a hydraulic seal and left in the warmth. As soon as the frequency of gas evolution begins to subside, yeast should be supplemented with one more kilogram of sugar and leave completely fermented. Ready to filter through a couple of layers of gauze, pour on bottles, clog and leave for a couple of months in the cool. After the fermentation time, the wine is again filtered through gauze, and then consumed.

Recipe for making wine from red ashberry

The frosted rowan is thawed and we are doused with boiling water, so that the berries will better give the juice. Next, the berries are crushed or passed through a juicer. The resulting juice is combined with water and sugar in proportions determined by the desired sweetness of the drink. In general, for table wine for each liter of juice, 2.5 liters of purified water and one and a half kilograms of sugar.

After the sugar has dissolved, the wine must be put on the water seal. The time of preparation of wine from red ashberry will directly depend on the fermentation speed, once the fermentation is completed, the wine can be removed from the water seal, filtered and bottled.

Homemade sparkling wine from red ashberry

Pre-unfrozen rowan should be washed and chopped, then pour 9 liters of boiling water and cover the container with berries gauze lid. As soon as the fermentation process begins, the basis for sparkling wine will need to be filtered and mixed with sugar. Wine is bottled and inside each we put 2-3 berries of unwashed raisins. Next, close the wine stoppers and leave the fermentation right in the bottle, placing them in a cool place.

Wine from red ashberry

Rowberry berries sorted, washed, dried and freezed in the freezer for 10-12 hours. Frozen berries should be poured with boiling water and boil for 15 minutes to squeeze out of them as much juice as possible in the future. The first water should be drained, poured ashberry with fresh liquid, once again drained, and the berries are stretched and pressed. The juice is poured into a clean dry jar, and poured into a clean hot water and leave it for 5 hours.

After the time has elapsed, it must be pressed again, and the resulting liquid mixed with the primary berry juice. Mix the base for wine with water and add sugar to taste. Leave the drink to wander, not forgetting to put it on the water seal. At the end of fermentation, the wine from the red mountain ash must be filtered through several layers of gauze, poured into bottles and left to ferment already in the cool for 2-3 months.
