Apple chips

Chips are a popular snack, often served to beer. It is a thin slice of potatoes or other fruits, usually fried in oil (deep-fried). Trade networks offer in an abundant assortment of potato chips with unwholesome preservatives, flavorings, dyes, etc. And that's not to mention the fact that this way of cooking as deep frying, in itself, is quite harmful.

Well, what to do, because sometimes you want something "gnawing", sitting near a TV or talking with friends and family?

The solution is: you can cook tasty and useful apple chips at home, and cook without frying. Such a delicacy is a real find for those who are not indifferent to their health and care about the figure. The only point: apple chips are more suited to tea, wine, mate or compote, and not to beer (although there are special types of beer with fruit ingredients).

Let's figure out how to cook apple chips. For the preparation of apple chips we choose strong ripe (but not ripe) apples of any sort, best of all - sweet and sour, and however, this is a matter of taste.

My apples with cold water and dried, then carefully cut out the middle with peduncles, seeds and seed boxes (it's a good idea to have a special device on it - a tube made of food grade stainless steel with a cutting edge). We cut apples across round thin slices with a hole in the middle. The thickness of the slice is about 0.5 cm.

The circles of apples are placed in a bowl and poured with a mixture of cold water and lemon juice. We are doing this so that the apples on the cut are not darkened.

Apple circles should be in acidified water for 30 minutes or so. Then spread the slices on a paper towel. Excess water must be removed.

At the next stage, we string (put on) the apple circles on the twine or dense thread. Between the circles there must be a sufficient distance for the passage of air. We pull the twine (fix it as a clothes line) and leave it in a well-ventilated room for 3 days. You can put apple circles on clean wooden sticks.

After this time, spread the apples on a grate or a dry baking tray and dry in an oven at a minimum temperature. You can do this in several ways, preferably, at least with a single turn. When drying, it is better to keep the door slightly ajar.

When the apple chips are almost ready, turn off the fire in the cooking chamber of the oven, push the grate and lightly sprinkle them with cinnamon and vanilla (in the form of a powder), then slide the grate back, close the door and let it cool naturally. You can mix cinnamon and vanilla with a small amount of powdered sugar.

You can store such chips in glass, ceramic, wicker or wooden utensils, covered with a natural cloth, or in containers with lids, when closed, chips are provided with air access.

Preliminary preparation and cutting of apples can look the same as in the previous recipe (see above).

Instead of using vanilla and / or cinnamon, when apple circles are placed in a container with a mixture of cold water and lemon juice, you can also add a glass of light rum, gin or tequila, barberry extract or lime juice to this odor. Here you can experiment, but do not use too sweet fillers like fruit syrups.

In the microwave, the apple chips are dried for 2-10 minutes.
