Apricot is a very useful and tasty fruit, it contains a lot of different vitamins and microelements. Of course, it is best to eat apricots in fresh form or dried (known dried fruit dried apricots ). However, you can prepare and apricot jam.

Apricot jam recipe
Ingredients:
- Apricots ripe - 1 kg of fruit (weight without pits is indicated);
- sugar of domestic production - about 500-700 g;
- lemon juice - 1-2 tbsp. spoons.
Preparation
We will wash apricots with cold water, divide into halves and remove pits.
We place apricots in a wet basin or pan (enameled without flaws or aluminum), pouring the fruit with sugar for 3-5 hours, so that the fruits are well letting the juice.
Put the container on the fire, add a little lemon juice and, carefully mixing with a wooden spoon or spatula, bring to a boil on medium-low heat. Reduce the heat and cook with minimal boiling for 10 minutes, periodically remove the foam.
Slightly cool and with the help of a submerged blender we bring to the state of mashed potatoes. Once again bring to a boil on low heat and cook, stirring constantly, for 10 minutes. Gem should thicken. Drip jam on a saucer, if the drop does not spread, then the jam is ready.
Ready-made apricot jam can be rolled in sterilized jars and stored on a glass veranda or loggia.
Apricot jam is good to serve with tea, rooibos, carcade or mate.

Curd-chocolate roll with apricot jam
Ingredients:
- cottage cheese - about 600 g;
- Wheat flour - 5-8 tbsp. spoons;
- eggs of chicken - 2 pieces;
- cream dairy natural - 3 tbsp. spoons;
- cocoa powder - 2-3 tbsp. spoons;
- sugar-2 tablespoons. spoons;
- vanilla - 1 pinch;
- apricot jam.
Preparation
We connect in a mug of cocoa with sugar, mix thoroughly, so that there are no lumps, add cream and dissolve with light heating. Cool it down.
Combine the curd with flour in a bowl, stir with a fork. Pre-sift flour. We add eggs and creamy-chocolate mixture. Stir the dough thoroughly and form a rectangular sheet of it on a piece of film or paper. Stepping back from the edge of centimeter 3, we put along a thick longitudinal strip of jam.
We wrap the roll, then turn the paper and place the product on a pan covered with the same cook paper. Bake at a temperature of about 200 degrees for about 30 minutes. We cut after the roll has cooled. Serve with tea or coffee.
