Fritters from courgettes with minced meat

The season of fresh zucchini has almost come to an end, but if you want to implement the dishes from the summer menu even in winter, then prepare zucchini for the winter. From frozen vegetables in the future, you can prepare stew, casseroles and even pancakes from zucchini with minced meat, the recipe of which we will disassemble below.

This simple recipe, except for the chicken and zucchini, includes a set of spices, which in combination gives only a light taste, unobtrusively emphasizing the poultry and vegetables.

Wash zucchini, grate, generously season with salt and leave for 15 minutes. After a while, squeeze out excess juice with your hands, and then shift zucchini to a pair of paper towels and dispose of the remaining water. Dishes of grated zucchini are combined with chicken forcemeat, dried onion, garlic and cayenne pepper. Add the egg for the bunch. The resulting mixture on the fritters should come out slightly liquid, not like the usual cutlet mass.

Now you can start roasting. Once the fritters from zucchini and chicken ground are browned on one side, turn them over to another, and then get rid of excess fat by laying cutlets on paper towels.

Fritters from courgettes with minced meat and cheese

The recipe for these fritters from chicken and courgettes is complemented by cheese. We used soft Italian ricotta, but you can replace this cheese with ordinary curd or put in a recipe pieces of your favorite hard cheese in equivalent quantities.

After rubbing zucchini, season with salt and leave for 10 minutes, then squeeze out excess liquid and mix the vegetable with minced meat. Add the chopped garlic, cheese and egg, season the mixture again and combine with the onion greens. When the stuffing is ready, you can start frying, and you can make pancakes from zucchini with minced meat in the oven, laying the portions of the mixture on the parchment covered baking tray and placing in a preheated to 190 degrees oven for 15 minutes.

Ready-made pancakes can be served both hot and cold.
