In addition to kefir, as the basis for gingerbread can be used sour milk, fermented milk, yogurt or low-fat sour cream, in short, any sour milk base of medium density will provide the required consistency and density of the dough.

Combine the yogurt with egg yolks and sugar, add butter and soda to the mixture. It is not necessary to extinguish the latter, since the content of lactic acid in kefir is sufficient to cope with this task. Now put a third of the whole flour and knead the sticky dough. Pour the remaining flour onto the work surface and put the dough into it. Gradually picking up the flour and working the mixture with your hands, make sure that the dough does not lose its softness and light stickiness, but it was convenient in work. At this stage, the dough can be rolled up to one and a half centimeters thick and cut by hand or with the help of figured cutting. In the center of each carved form, you can put a piece of chocolate or jam.
