Casein is one of the complex proteins. Most of it is contained in cow's milk and cottage cheese. In this regard, this diet is used more often by mothers, in whom the child's body perceives these two proteins as an antigen. As a consequence, the walls of the small intestine, covered with small villi, begin to damage and atrophy. But the gluten-free diet for children is not only obliged to restrict the intake of certain foods, but also must replenish the body's body's stores of fiber daily (without gluten), B vitamins and iron.

According to representatives of the University of Pennsylvania, a diet without gluten and casein leads to excellent results in people with bowel problems. The only thing, this diet can not be used for a month or six months, it should become part of the way of life forever.

Also, the absence of gluten in the diet favorably affects people with celiac disease, reducing the degree of complications of this disease.
