Preparing the preparation of a homemade lean mayonnaise, mix the wheat flour with a small portion of the water and grate it well until the flour clots are completely dissolved. After that, pour the remaining water, stir and set on medium heat. Warm the mixture, stirring constantly, until it boils and thickens and let it cool down completely. Meanwhile, in a separate bowl, combine the vegetable oil with sugar, salt, mustard and lemon juice and treat it with a mixer for two to three minutes. Now we introduce a little whipped mass into the brew mixture and continue whipping with the mixer until the mass becomes completely homogeneous, creamy and smooth.

How to cook lean mayonnaise at home without flour - a recipe for peas

Initially, mix the pea flakes with water and set to cook on the stove. In the end, we should get a well-boiled pea gruel. Instead of flakes, you can take crushed peas and pea flour. Only the cooking time in this case will increase or decrease, respectively. When using dry chopped peas, it must be pre-soaked overnight to reduce the time for digestion.

Next, continue cooking homemade lean mayonnaise on this recipe in a blender. The pea mass is transferred to the bowl and punched until a completely homogeneous texture is obtained. The consistency of mashed potatoes should be as a jelly of medium density, so if necessary, you can add a little water while the blender is working, adjusting the density of the contents.

Next, on one part of the cooled pea mixture, take two parts of vegetable oil without flavor and again break through the blender for at least a minute. After that, pour sugar, salt, mustard, a pinch of pepper and lemon juice into the mixture and beat for another 1.5 to 2 minutes. The amount of flavor additives can be adjusted to your taste, reducing or increasing their number and choosing the optimal proportion for yourself.

First of all, for the preparation of lean mayonnaise, we mix starch with a small portion of broth, and then combine it with the remaining broth and heat it to a boiling and thickening, stirring. After that, we add salt, sugar, mustard and lemon juice to the resulting vegetable jelly and mix thoroughly before dissolving all the crystals and obtaining a homogeneous mixture.

In the next step we will need a blender or, in extreme cases, a mixer. We pour into the cooled spicy mixture a thin trickle of vegetable oil without aroma and continuously break the mass at the same time. The more oil will be added, the denser and fatter the lean mayonnaise we get on the way out.
