To prepare a classic mimosa, the first thing we need to do is send butter to the freezer. Now we put eggs , placing them in cold salted water and boiling for ten minutes. We extract the eggs from the pan for a minute into ice water, after which we clean, separate the proteins from the yolks and grate them on a grater, and yolks mash with a fork.

With canned sardines, drain the oil or juice, and put the fish pulp in a separate bowl and knead it with a fork, while removing large bones. We grind also on a grater a firm cheese, and we clean bulbs and as it is possible more finely we cut with a knife. Fill onion mass for fifteen minutes with boiling water, and then throw it back on a sieve and let it drain.

Now proceed to the design of the salad "Mimosa". At the bottom of a wide shallow salad we lay out the squirrels, and on top cheese. Next, the turn of the fish, which should be generously seasoned with mayonnaise and put onions on top of it. Now we rub the composition half of all the yolks, cover them with a little mayonnaise and sprinkle with greens. Finally, we take out the oil from the freezer, hastily rub it on the grater over the salad, covering the shavings with a layer of greenery, and tearing the composition with the remaining proteins. We decorate the salad with greens, let it brew for several hours in the fridge, after which we can serve it to the table.

This recipe for salad "Mimosa" unlike the classic does not contain cheese and butter and it is added with rice, which makes the dish less caloric and more budgetary.

First, let's cook until rice is ready and let it cool down completely. During this time, we will cook hard-boiled eggs and, just like in the previous case, we shall grind separately and place in separate bowls squirrels and yolks. Boil also until soft, cool and let through the grater carrots, and the green onion feathers rinse with cool water, dry and cut into small pieces. With sardines drain the liquid, and mash the fish with a fork, removing it first from large bones.

Now we can proceed with the mimosa design. The first layer on the dish or salad bowl is laid out rice. Then turn the fish, followed by a green onion. Now distribute the proteins, then carrots and finish the composition with yolks. Each layer of salad, except for the latter, is larded generously with mayonnaise and, if necessary, poured into taste.
