Almond cake

Lovers of walnut baking just do not have to pass by the almond cake. A fragrant and delicious cake with almonds is more expensive than a similar dish made with peanuts, or walnuts, but the result will be worth the effort.

First, we lubricate a round detachable mold with a diameter of 18 cm, the bottom of the mold is covered with baking paper. Oven reheat to 170 degrees.

Cocoa powder mixed with a tablespoon of water and put in a deep bowl. Next we send flour sifted with baking powder, soft butter, eggs, sugar and almonds. The received dough is poured into the form and we put biscuits to be baked for 30 minutes. Let the cake cool down, and then divide it into two equal parts.

Chocolate melt in a water bath and add water to it. Spread the corks with chocolate and sprinkle almond petals.

Almond flour mixed with sugar and wheat flour. Separate the egg whites from the yolks, lightly cool and beat with sugar until solid peaks. Mix the proteins with the nut mixture and spread the resulting mass on a greased baking tray in an even layer. We bake corn at 180 degrees 45-50 minutes.

Whipped cream with sugar powder until thick. To the cream obtained, a thin trickle is poured in coffee with a spoon of gelatin dissolved in it.

We cut the cake into two parts and smear it with cream between the layers and on top of them. Sprinkle cake of almond flour with coconut shavings, decorate with sweets and nuts.

Almond flour mixed with sugar powder. Chop the egg whites to hard peaks and, stirring sparingly, add almond flour to them. Ready mixture put in a flat layer in the baking dish, pre-lubricating it with oil and covering the bottom with parchment for baking.

While the cake is baked, we will make custard . Egg yolks are mixed with milk and sugar. We put the mixture on a water bath and, stirring constantly, we add milk to it, with the diluted in it with a spoonful of starch. Cook the cream until thick.

The cork is slightly cooled, cut into two parts and smeared with cream on the outside and inside. sprinkle a delicacy with almond petals and leave in the refrigerator for a couple of hours, brew for infusion.

This almond cake can also be prepared with mascarpone cheese if you do not want to mess with the custard. To do this, simply whip the cream cheese with vanilla extract and sugar powder, adding the latter to taste. The cake remains to decorate the almond cover and leave it soaked for a couple of hours before serving.
