Cider at home

Cider is a low-alcohol beverage that has become particularly popular recently. It is, in fact, apple flavored, fizzy, light wine. Now we will tell you how to cook cider at home and for this we will consider several recipes.

Home cider from apples

For the preparation of cider from apples at home there are many simple recipes. You can use absolutely any fruits, the main ripe and juicy.

From unwashed apples cut the peel and add to the 3-liter bottle in 2-3 cm layer. The apples should be unwashed, because on top of the skin are wild yeast, they will start the fermentation process. But all used containers on the contrary should be perfectly clean, even better sterilized. Purified apples are passed through the juicer (meat grinder), squeeze the juice and diluted with water: 2 parts of juice for 1 part of water. The water must not necessarily be from the tap, i.e. artesian, spring or well-purified. We fill the skins with the received nectar, pouring two fingers to the top. We put the bottles under the hydraulic shutter with a special cover or put a disposable rubber glove on the neck and put it in a warm dark place.

In a couple of days, the fermentation process will begin, which will last from a month to two. After this time, the yeast will settle on the bottom and the cider will be cleared, the skins will float upward. With the help of a tube it is necessary to carefully drain a clean layer of liquid, which is in the middle, without touching the sediment on the bottom. We pour cider into a container, in which it will ripen (this process is called carbonization). Spilling can add sugar, if you like it is not enough (3 liters - 100-200 grams of sugar). Now put tightly closed bottles or a bottle in a cold place (cellar or refrigerator) for 1.5-2 months.

During this time, the yeast will again settle and then it will be possible to gently spill the cider into the bottles in which it will be stored. It must be a cool place.

For the same recipe at home, you can prepare and cider from pears. Only you need to consider that pears are often sweeter than apples and the main thing is not to overdo it with sugar.

Recipe for home cider from juice

In clean dishes (three-liter bottle) pour apple juice, yeast pour warm water (half-shampoo) and leave for 15 minutes. When the yeast dissolved, we pour them into the juice and put it under the water seal, leaving it to wander in a warm place. Days for 6-7 cider ferment and a couple of days yeast will precipitate. Carefully merge it with a tube and pour into clean bottles. Add sugar - 3 tbsp. tablespoons per liter. The bottles are well clogged and leave for carbonation for 10 days in a cool place. The yeast left in the cider will react with the sugar, releasing carbon dioxide, thereby saturating the liquid, because bottles are tightly closed, and there is nowhere to go. In this case, a small amount of sediment may appear, so pour the cider carefully - the pellet should not get into the glass, or pour it into a decanter or other clean bottles with tightly closed lids. This cider can be stored for about a year.

Recipe for homemade cider from dried apples with cinnamon

In the prepared clean container (keg or bottle) we pour out the drying and sugar and pour warm boiled water. Cover it with a cloth and put it in a cool room of the day for two or three. As soon as the liquid begins to ferment, add raisins and a little cinnamon. We transfer the cider for fermentation in a warm place and put it under the water seal. So he wanders for a few weeks. Once you notice that the fermentation process is over, you can pour the cider into clean bottles and tightly clog them. To drink, the drink will be ready in a couple of weeks. The strength of the finished product depends on the amount of sugar, so if you want a stronger drink, you can add more sugar - 200 grams per liter.
