The combination of "salmon with shrimps" works great in any kind: in soups, as a filling for pasta and, of course, in salads.
Soup with salmon and shrimps
Ingredients:
- fillet of salmon - 500 g;
- shrimps (peeled) - 300 g;
- broth of fish - 1,5 l;
- potatoes - 3 pcs .;
- carrots - 1 piece;
- onion - 2 pieces;
- celery (stem) - 2 pcs .;
- canned corn - 200 g;
- cream (fat content of 10%) - 1 item;
- flour - 1 tbsp. a spoon;
- olive oil - 1 tbsp. a spoon;
- dill - 1 bunch;
- salt, pepper black ground - to taste.
Preparation
Cut the same small cubes of onions, carrots and celery. Heat the oil in a saucepan and lightly saute the vegetables. Add the flour, fry another minute and pour in the fish broth . Stirring, bring it to a boil. We throw potatoes, salt, pepper and cover with a lid. Cook until the potatoes are soft. Then add small pieces of chopped fish, peeled shrimp and corn (the liquid from the canister must be pre-drained). Cook the soup for another 5 minutes, then pour in the cream. Bring to a boil and remove from heat. Sprinkle with chopped dill, cover with a lid and let it brew for 5-10 minutes. And then served to the table - with slices of lemon or lime.
Pasta with salmon and shrimps
Ingredients:
- paste - 500 g;
- salmon fillet - 400 g;
- shrimps (peeled) - 400 g;
- cream for drinking - 1.5;
- cheese "Parmesan" - 50 g;
- zucchini - 1 piece;
- garlic - 3 teeth;
- olive oil - for frying;
- basil - 3 branches;
- oregano - 2 branches;
- salt, pepper black ground - to taste.
Preparation
Heat the olive oil in a deep frying pan and gently fry the thinly minced garlic. And as soon as the characteristic aroma appears, we add slices of salmon, and after 3-4 minutes of shrimp. Stirring, we stand on the fire for 5 minutes (the fish and shrimp should be almost ready at the same time) and throw the zucchini crumbled with small cubes.
Fry for a couple of minutes and pour in the cream, a little water from the cooking paste, herbs and spices. Cover the lid, reduce the heat to a minimum and pause for 5 minutes. Add the ready (but slightly hard) paste, warm up literally for half a minute and remove the frying pan from the plate. Immediately lay out the pasta with salmon on plates and serve it to the table, seasoning with grated parmesan and leaves of fresh basil.
Salmon baked, stuffed with shrimps
Ingredients:
- salmon fillets - 2 pcs. on 30 sm;
- shrimps cocktail - 300 g;
- cream cheese "California" - 250 g;
- leeks (stalk) - 1 pc .;
- tarragon - 3 branches;
- olive oil - 1 tbsp. a spoon;
- salt sea, pepper black ground - to taste.
Preparation
First we knead the cheese so that it becomes softer and more plastic. Then add to it finely chopped tarragon and finely chopped leeks. Solim, pepper. We mix it well.
We put one fillet of salmon skinned down. Evenly distribute cheese on it and close the second piece of fish. We bind everything together with a thread and put the improvised roll into a baking dish, having previously oiled it with olive oil. We send it to the oven, heated to 190 degrees. After 20 minutes, lower the temperature to 160 and keep the salmon in the oven for another 15 minutes. Then we take out, cover with foil and give 10 minutes to "rest" before serving.
