Beef soup - recipe

Meat soups based on beef meat - food is nutritious and satisfying. In addition to meat, their composition, of course, includes other ingredients. As the second most important ingredient you can use different products, such as potatoes, beans, buckwheat, mushrooms, etc.

The main point in the implementation of any recipe when making beef soups is to prepare the broth correctly, that is, to cook beef. To prepare transparent beautiful broths from beef and various soups based on them, the rump with bone, the knuckle, the back of the rump, the groin, the shoulder or shoulder parts of the carcass (for borscht and cabbage it is better to use the front part of the brisket) is most suitable. You can use a shank, though it lasts longer and is more suitable for jelly.

Beef cooked long enough - until ready for at least 1.5 hours, until soft for another 40 minutes at least. Of course, the cooking time also depends on the age, sex and conditions of animal maintenance.

Preparation of broth. Thaw meat in cold water. It is better to cook without bones (broth on the bone is not useful), cutting the meat with not too large chunks. Boil the beef with a weak boil with a bulb, bay leaf, peppercorn and cloves. Timely collect noise and fat. After the meat is cooked, lightly cool it in the broth. Broth can be filtered or carefully poured into another pan - on the basis of this broth we will cook soup, using and part of the cooked meat.

Broth with the meat returned to it is brought to a boil in a small saucepan. We clean the potatoes and cut it not too finely, so that the slices are conveniently placed in a tablespoon, peeled carrots cut into strips. We put potatoes and carrots into a saucepan with boiling broth, again bring to a confident boil, taking off noise, and cook for 10-12 minutes. In the meantime, it's done, cut the sweet peppers into short straws.

We put it in a saucepan, fry it and cook for about 8-10 minutes. You can add together with a sweet pepper and a little broccoli, disassembled on the kitten. You can add 1-2 tablespoons of tomato. Finished aromatic soup with meat poured on plates or soup cups ladle, season with black pepper and sprinkle abundantly with chopped herbs and garlic.

The recipe for bean soup with beef differs little from the previous one (see above).

There are two options: with ready-cooked boiled beans, with young beans. It is very convenient to use ready-made frosts with cooked beans. The cooking time of this semi-finished product is about 10 minutes. Therefore, the young beans are put in the soup for 10-12 minutes until ready.

The recipe for buckwheat soup with beef suggests adding 2-4 table spoons of washed buckwheat to the soup. The proportions and list of other ingredients are the same as in the first recipe (see above). Brewing the buckwheat together with the potatoes.

Recipe of mushroom soup with beef is also simple. To the list of ingredients, add 150-200 g of fresh mushrooms (oyster mushrooms, white, champignons). Mushrooms cut into small pieces and put together with potatoes. These mushrooms are completely welded for 20 minutes. You can use both fresh mushrooms and frozen ones.

The recipe for noodle soup with beef involves adding a small amount of noodles instead of or together with potatoes to the basic recipe. Noodles are brewed very quickly, so we put it in soup not together with potatoes and carrots, but for 5-8 minutes until ready.
