First, let's mix a spice for marinating a bird: grate salt and pepper in a mortar with sage leaves until a homogeneous paste is obtained. Duck carcass rinse with water and rub with a kitchen towel. Lubricate the duck with butter and rub with a fragrant paste of sage. Leave the bird soaked with taste and aroma for 1.5-2 hours.

In the meantime, buckwheat can be picked and poured with boiling water. Apples should be peeled off, and cut into small slices. Now the marinated duck can be stuffed with stuffing, alternating apples and buckwheat. Stuffed carcass sewn thread and put in a preheated to 180 degrees oven for 1.5 hours. To make the crust golden and crispy, and the meat is not dry, periodically water the bird with the released fat. Also, for the duck to retain its juiciness, put a pan of water on the bottom of the oven. We leave the prepared poultry for 15-20 minutes at room temperature in order not to lose meat juice, after which you can arm yourself with culinary scissors and rid the carcass from the threads. We spread the duck with apples and buckwheat on a dish decorated with vegetables and lettuce leaves.

We wash the bird and dry it. We rub the duck with salt and pepper.

In a frying pan, we warm up the vegetable oil and fry on it chopped onions and grated carrots on a large grater. As soon as the onion will become transparent, add mushrooms not cut into plates and fry all together until the moisture evaporates completely from the frying pan.
