"Holodnik" soup with beetroot - recipe

In hot days, the first dishes, I want to diversify with more refreshing and light options. First of all, we are talking, of course, about cold soups. Today we will tell you how to prepare a cold drink - a Belarusian variant of Russian okroshka.

Boiled beets are cleaned and shredded on a large grater. Cucumbers finely chop, and eggs are hard-boiled and crushed. Now mix all ingredients in a saucepan, season with spices and pour cold kefir. We decorate the dish with chopped herbs and pour soup cold meat with beetroot on plates.

Beets are boiled, cooled and rubbed into a deep saucepan. Eggs are prepared hard-boiled, cleaned, crushed in cubes and thrown to the beetroot. Green onions and cucumbers finely chopped, sent to a pan and season all the ingredients to taste with spices. We put a little sour cream, carefully mix everything and pour cold kefir.

Beetroot and potatoes are thoroughly washed and dipped gently into a saucepan with boiling salted water. Boil the vegetables for 45 minutes until soft. Eggs are piled in a bucket of water and also sent to the fire for 10 minutes. Further we remove from a plate, we cool and clear from a shell.

In a separate saucepan, boil the water, add salt to it and dip the washed fillet with the peeled onion. We cook meat for about 20 minutes from the moment of boiling. After that, carefully take it out, put it on a plate and cool it. Kefir dilute strained cold chicken broth, add grated beets and mix. Cover the lid and send it to the refrigerator for an hour.

Do not waste time, clean the boiled potatoes and cut the small cubes. The same pieces of chopped chicken fillet and cucumber. Greens rinse, cut with a knife, and the eggs are released from the shell and shredded cubes. Now we connect all the products in a bowl, pour sour cream, add salt to taste and mix well. We put the prepared salad in a saucepan and send the soup "Holodnik" with beets on kefir again in the refrigerator.
