Ingredients:
- Beef stuffing - 520 g;
- rice - 55 g;
- onion - 115 g;
- chicken broth - 950 ml;
- tomato paste - 35 g;
- flour - 45 g.
Preparation
For this recipe, rice arborio, from which a risotto is made, or any other grade of grains with a high starch content, that will hold the meatballs together is ideal. There is no need to boil it beforehand, during the extinguishing time, rice will have time to soften.
Spare the pieces of onions in an abundance of olive oil and combine it with minced meat and rice. Do not forget about spices. From the resulting mixture, roll the meatballs and pan them in flour. Later, the flour not only makes the meatballs rosy, but also helps to thicken the sauce. Fish meatballs with rice in tomato sauce
The combination of fish and rice is extremely popular in Asian cuisine, but what will stop us from transferring this combination to Italian cuisine and preparing meatballs based on fish?
Ingredients:
- fillets of white fish - 520 g;
- rice (boiled) - 65 g;
- ground cumin - 1 teaspoon;
- egg white - 1 pc .;
- ground coriander - 1/2 tsp;
- garlic teeth - 5 pcs .;
- tomato paste - 55 g;
- broth - 475 ml;
- tomatoes in its own juice - 310 g.
Preparation
Chop the fillets of white fish and season it with a pinch of salt and freshly ground pepper. Add the rest of the spices, followed by egg whites and boiled rice. Form from a mixture of tefelki and brown them in an abundance of olive oil.
Grind chives and quickly fry them, add tomatoes and broth. Give the sauce to boil, reduce heat and put the meatballs in it. Leave the dish on the stove for 20 minutes.
Chicken meatballs with rice in tomato sour cream sauce
Another useful, nutritious and low-calorie option can be meatballs based on chicken minced meat. At the heart of a dietary dish there can be only one fillet, but for a change it is possible to supplement minced meat and red meat of a bird.
Ingredients:
For meatballs:
- Chicken ground meat - 760 g;
- rice - 115 g;
- egg - 1 piece;
- onion - 65 g;
- garlic cloves - 1 piece;
- flour - 35 g.
For sauce:
- butter - 35 g;
- flour - 15 g;
- chicken broth - 480 ml;
- sour cream - 55 g;
- tomato paste - 25 g;
- paprika - 5 g.
Preparation
Combine all ingredients for minced meat, except flour, together. With oiled palms, form meatballs and pan them in flour. Rinse in the abundance of heated oil until the meatballs are fully ready. After, shift the meatballs to a dish, and in the same bowl, melt the butter and save the flour. As soon as the flour pasta gets a cream shade, add the broth, tomato and sour cream, season everything with the paprika and leave the sauce to thicken. Return the meatballs in a frying pan and heat in sauce, after which you can immediately serve the dish in the company of greenery.
