Plum wine at home - recipe

Ripe plums leave the day at 3 so that they get sun in the daytime. You do not need to wash them. When the fruits lie in the sun, wild yeasts that promote fermentation will appear on their surface. Bones from the plums are extracted, pulp is turned into puree. Then the resulting mass in a 1: 1 ratio is diluted with water and left for 2 days in a dark warm place. Once in 6-8 hours must be mixed with a wooden stick or just a clean hand. After that, the cuticle with the pulp will begin to actively separate from the juice, and on top will appear bubbles. This means that the process of fermentation has gone. Filter the wort through gauze, and pour the resulting juice into a fermentation vessel.

Now came the turn of sugar. Its quantity will depend on how sweet the plums originally were and how sweet the wine would be. For dry or semi-dry wine, you need 150-200 g of sugar per liter of juice, and for a semisweet and sweet drink, respectively, 250-350 g of granulated sugar is required.

To ferment went well, it is desirable to add sugar not all at once, but in parts. The first batch - about half of the total volume is added immediately after the juice is poured into the container and mixed well. Fill the vessel with juice no more than ¾ volume. With active fermentation, carbon dioxide and foam will form, which also needs space. After that, we install a water seal on the tank, even an ordinary rubber glove, pierced in one place with a needle, will do. When the fermentation is finished, and the domestic plum wine is ready, the glove will fall.

Wine from plum jam

Jam is mixed with warm water in a proportion of 1: 1, add raisins. It should leave quite a sweet, but not a cloying must. If suddenly the sweetness is not enough, pour sugar to taste. On the neck of the tank we set the water seal. Transfer the container to a warm dark place. Day after 4 remove the water seal, through a thin tube merge about 100 ml of wandering wort and bred in it the remaining sugar. The syrup thus obtained is poured into a container with a beverage and again the water seal is installed. Wine can ferment from 30 to 60 days. After it ferments, carefully pour the beverage off the precipitate. If desired, you can add sugar or fix the drink with vodka. Let the wine infuse for a couple of months in the cold and after that it will be completely ready for submission.

Homemade plum wine - a recipe for cooking at home

In the fermentation tank pour the compote, add sugar. Its quantity can be adjusted independently, based on the initial sweetness of the drink. Also add raisins. We put a hydraulic seal or a simple rubber glove on the container and leave it in a warm dark room for several weeks. If there is no possibility to put in a dark place, the capacity is simply wrapped around something. When the fermentation is over, we filter the drink, gently draining it from the precipitate. We pour it over the prepared clean bottles, we keep it 2-3 months in a cool place, so that it sticks and ripens, and after that the wine from the plum compote will be ready for serving.
