Nevertheless, in butter, shortbread cookies are much less successful: it melts more easily, does not hold shape, or simply fails. Before starting to knead the dough, we put all the products in the refrigerator for a couple of hours. Then very quickly we rub margarine with sugar. We try to whip quickly, it is important that the sugar dissolves, and margarine does not melt. Add milk, vanillin and twice carefully sifted (for air saturation) flour. The dough is kneaded gently, not for long - the mixture should remain cold. We turn on the oven for warming up - immediately to the maximum, in the meantime, carefully place the biscuit on the baking sheet: either with a figured spoon, or place the dough in a confectioner's bag and squeeze it out portion by piece. Baked cookies quickly, after 10-15 minutes can be removed from the baking sheet and cooled. When the cookie cools down, you can decorate it with chocolate icing, melted chocolate, cream or just jam.

Shortbread biscuits can be baked using the recipe for margarine and sour cream. The cookies turn out to be high-calorie, so be careful and do not leave it for the second half of the day.

Because the dough needs to be kneaded very quickly, it's best to use a mixer. Sugar is smeared in powder, combine with vanillin and sifted (preferably twice) flour and soda. Add the margarine and quickly rub our dry ingredients into the crumbs. It is not advisable to use oil instead of margarine - the cookie will not be so good to hold the shape and get less melting. Add the sour cream and mix the dough very quickly. We remove it in the refrigerator for half an hour-hour, and in the meantime the baking sheet is forgiven with parchment, and the oven is heated at the highest possible temperature. Quickly roll out the dough, cut out the cookies, lay them on a baking tray away from each other and send the oven for 15-20 minutes. In this recipe, you can use mayonnaise instead of sour cream - the main thing is that it should be without flavor additives, and ideally - homemade. Cookies on mayonnaise are also melting, but easier due to vegetable, and not animal fat.
