Curd "envelopes" - a very popular dessert baking, in most versions prepared from a cottage cheese dough (other names are "kisses", "shells"). Melt and lightly cool the butter. With the help of a fork, rinse the curd in the bowl with sugar and egg, add melted butter, soda, rum, cinnamon or vanilla. We mix it. If cottage cheese, in your opinion, is more dry than it should, you can add a little sour cream to it. Gradually add to the mixture sifted (necessarily) flour and knead the dough, you can mixer. The dough should not be too steep. We roll it in a lump, leave it in a bowl, cover it with a clean napkin and put it in the refrigerator for at least 40 minutes, or better - for 1-1.5 hours, let it settle, "rest."

After passing the calculated time, the dough is kneaded and gently mixed. The working surface is lightly sprinkled with flour and rolled out a 0.5 cm thick layer of dough. Cut out the dough from the dough with a glass.

We form cookies. Lightly sprinkle half a circle with sugar, add a circle on the median axis in half, and then add the resulting semicircle in half and lightly press the edges. We should get envelopes in the form of a circle segment of an equal 1/4 part. Other forms are possible.

We spread the envelopes on a greased baking sheet (it is even better to pre-coat the baking sheet with oiled paper). With the help of a brush, grease the pastry with egg yolk and lightly sprinkle with sugar.

Bake cottage cheese "envelopes" in the oven, heated to a temperature of about 200 degrees C for 15-25 minutes (we control the readiness visually). Before serving a cookie, at least lightly cool it. You can slightly modify and improve the recipe for curd cookies "envelopes", completely eliminating sugar from its composition, because it is not useful. If you also exclude from the test and spice (that is, vanilla or cinnamon and rum), you will get a cookie with a savory neutral taste. Such baking can be served not only for tea, coffee, kefir and compote, but also for fish, meat and mushroom broths and to various soups (instead of bread).

If you add a little cottage cheese before kneading the dough for curd "envelopes" and slightly add salt during the folding process, you will get a wonderful cookie for beer. We use with caution, do not get carried away.

Other variants of preparation of curd "envelopes" are possible, for example, they can be made from puff pastry with curd filling, folding the envelope from the square of the dough.
