How to cook cranberry mousse? We take the berry, thoroughly rinse, pour two spoonfuls of boiled water and rub it under a crust, or whisk the blender into a homogeneous mass. The resulting mixture is placed in a sieve and wait until the juice is merged into the bowl, and pour the cake with boiled water. We put it on a weak fire, bring it to a boil and boil it for 5 minutes. Then again, grind it through a sieve, put the liquid on the plate, and throw out the cake. Add sugar to the berry juice, bring to a boil, stirring constantly. Then gently pour semolina and cook on low heat for about 15 minutes. The resulting mass of lightly cool, add cranberry juice, which at the very beginning was set aside and thoroughly beat everything with a mixer for 7 minutes - until a lush foam. The resulting cranberry mousse with semolina is spread on high glass glasses or kremanki and put it on the refrigerator for a couple of hours to freeze. Then filter and pour sugar into the cranberry broth, we gradually add gelatin and, continuously stirring, heat it to a boil. Ready syrup is combined with cranberry juice, we cool it for 30 minutes in the fridge, and then beat the mixture with a mixer or whisk until a uniform thick foam is formed.

The resulting mass is poured into the prepared molds or kremanki, put in a cold place to freeze. When serving, pour mousse syrup.

For the preparation of the syrup, cranberries are kneaded with tolstooth, poured hot water and cooked for 5 minutes. Then filter, add sugar to the broth, heat again to a boil, then cool.
