At first, the most time-consuming process - we share eggs. We only need yolks. We connect the yolks with sugar and whisk into a foam. The vanilla pod is cut, the seeds are scraped and added to the milk. Milk is warm, about a third of the warm milk is poured into the yolks and whisked at maximum speed to quickly combine the mixture and give it splendor. When the remaining milk has become hot, pour into it our whipped mixture and, stirring vigorously with a whisk or fork, warm up to an easy thickening on minimal fire. Be careful - the mixture should never boil, otherwise the yolks will simply curl up. We thicken the billet through a sieve and set it on ice. Stir until the ice cream has cooled to room temperature. Now we send it to the machine for whipping ice cream. You can make homemade ice cream (the recipe is the same) on milk without an ice cream maker. We pour the mixture into small molds (cups from yogurt, silicone molds or simple plastic cups), and send them to the freezer for one and a half to two hours. As you can see, making homemade ice cream from milk is easy, the recipe is even for children.

  1. If there are no quail eggs, you can use chicken, but the first option is more dietary. In addition, quail eggs do not have salmonella, and since we do not boil the mixture, there is no risk of getting infected.
  2. Ice cream from goat milk at home is prepared in the same way. However, when buying milk, make sure that it does not have a specific odor.
  3. In the ice cream, you can add fillers: pieces of fruit or berries, chocolate chips and others. This is done as follows: the container with the cooled mass is sent to the freezer for a quarter of an hour, after that we mix, after a quarter of an hour add the filler and mix again. The third time we stir the ice cream after another same period of time.
  4. If you want to get a more delicate and lush ice cream, with each stirring, add 3-4 tablespoons of whipped cream . So ice cream will be more calorie, but also softer.
