Omelette with broccoli

Omelette - simple in cooking, fast and very popular dish in the food practice of many peoples of the World. Most often, an omelette is eaten in the morning or during lunch, although options are possible. There are many different recipes for omelettes, but the main ingredient is always one - it's slightly beaten eggs. In different national-regional versions, some other products are added to omelets, namely: milk (or lactic acid drinks), sometimes, water, beer, flour, others.

Tasty useful and hearty omelets can be cooked with fresh vegetables: with broccoli, tomatoes, sweet pepper and greens.

Cooking omelettes is best in butter, at least, so they cook in France, which, in a certain sense, can be considered the birthplace of the classic omelet.

If there was no butter in the kitchen in the morning, it's better to use overturned pork or chicken fat, so it will turn out tastier and more useful. You can also use a finely chopped fat pork brisket or bacon - it will be even tastier.

Broccoli inflorescences are broken into individual kocheshki as small as possible, or crushed with a knife and blanched with boiling water (that is, pour for 5 minutes in a separate bowl, then water with salt).

We will cut bacon or a brisket in small cubes (actually as cut fat on cracklings), we put them in a frying pan and we put on weak fire. We cover with a frying pan, sometimes we mix it with a spatula and wait until the cracklings decrease in size (they will be fried, and from them the fat will be drowned). We cut tomatoes into small thin slices, sweet peppers - small squares. We cut the greens finely.

You can add a piece of natural butter in the frying pan - this way grams 25 - for taste. We put in the frying pan crushed sweet pepper, broccoli and slices of tomatoes.

Whisk the eggs with the addition of milk whisk or fork. If you want a nourishing, you can add no more than 1 tbsp. tablespoons of wheat flour.

Mix the fried vegetables with a spatula and pour all the beaten eggs. Sprinkle evenly chopped greens, and on top of grated cheese. Cover the lid. After about 5-8 minutes, the omelet will be ready. Segment it with a knife or spatula into 4 parts and put it on plates or serve it on a table in a frying pan.

To such an omelette it is good to serve ciabatta, a broken fresh wheat baguette, or Spanish wheat tortillas .

Alternatively, if you cook in a frying pan with a removable handle after the initial baking of the bacon, you can put vegetables in a frying pan, pour the beaten egg-and-milk mixture, sprinkle with grated cheese and vegetables and cook the broccoli omelette in a preheated oven for 20 minutes, cover.
