Sour cream chocolate cream

Mix cocoa powder with sugar powder so that there are no lumps. Proportion of cocoa sugar-sour cream choose the preferred one for you, you can vary widely. Gradually add the sour cream and rub it carefully. All is well and long-term stir.

To better dissolve the powdered sugar, you can first dissolve the mixture of sugar with cocoa powder in a small volume (50-100 ml) of slightly warmed milk or cream, and then mix with thick fatty sour cream. The cream prepared in this way will have a more uniform texture.

Such cream chocolate-sour cream is good for impregnating the cake of cakes or, for example, filling cakes, if you want the cream to become thicker, cool it. You can also adjust the density with cornstarch. If you want the cream to keep frozen forms, you can add dissolved in it a small amount of milk or water gelatin or agar-agar. In this version, work with the cream until it hardens.

To make a spicy and refined chocolate sour cream, you can add rum, dark or golden (or brandy, strong Madera or Muscat), as well as vanilla or cinnamon (but not together) to the mixture prepared according to the basic recipe (see above), Saffron, cardamom, grated nutmeg and even hot red pepper.

It is also possible to add ingredients such as raw quail eggs, nut or almond flour or pasta and melted ready-made chocolate. Of course, it is better to choose black chocolate with the maximum content of cocoa.
