In glass or enameled vessels we collect together the ingredients: kefir, eggs, salt, sugar (the amount is according to your taste). Mix everything thoroughly with a mixer and pour the resulting mixture into a saucepan. We put the saucepan on the fire and heat the billet for the dough to about 50-60 degrees (check "by eye"). The flour must be sifted so that it becomes airy, saturated with air. Pour it out to the mixture and mix it properly with a mixer, so that no lumps remain. Take a glass of boiling water and add a half teaspoon of soda to it. As soon as the reaction has gone - add to the dough and actively mix. The dough turns bubbly. In the end, add the vegetable oil and mix everything thoroughly with a spoon. Tender pancakes on kefir and boiling water fry in a hot frying pan and brown to your taste.

Tender pancakes on yogurt will do also with milk. Kefir before cooking should be obtained in advance from the refrigerator, so that it becomes room temperature. Eggs are broken and beaten with a mixer, adding salt and sugar to taste. We sift the flour through a sieve, first mixing the sachet with the baking powder into it. You can use and soda, but then it needs to be extinguished in boiling water. In the eggs we add kefir and gradually mix the sifted flour with the baking powder. Mix it so that the dough looks like thick sour cream. Now take the milk and bring it to almost a boil. Constantly stirring, we pour it into our dough - it becomes creamy at the same time. Liquid mass should be left to stand for twenty minutes and only after that add vegetable oil to it. Thoroughly mix and begin to fry the porous delicious custard pancakes.

Before cooking in kefir, you need to add soda and set aside so that it hissed. In the meantime, it is necessary to separately mix the eggs (whipping a little with a mixer), water (while we take only cold water), salt, sugar, only after that we add yogurt with the soda that is dried in it. Gradually stirring, add flour. All ingredients should be thoroughly mixed, so that there are no lumps left. It is safer to beat everything with a mixer. After whipping, add the vegetable oil. And finally add the main ingredient, which makes the pastry dough. Pour a thin stream of steep boiling water and carefully mix the dough for pancakes. Bake them on both sides in a very heated frying pan.

In general, there is no fundamental difference, which one you take the main ingredient. Tender pancakes are obtained as excellent on kefir, and on any other fermented milk product: ryazhenka, homemade yogurt or yoghurt.
