Carrot Diet

Carrots are a real storehouse of vitamins and nutrients. And its main secret is that carrots contain a large amount of beta-carotene, which in the body turns into vitamin A. This vitamin is known as "fat-soluble", which means that much more will bring a carrot salad dressed with vegetable oil or sour cream, than just eaten carrots. Also, this vitamin is known as a "vitamin of growth", so in the diet of children must necessarily be present carrots. It can be given to babies of the very early age, since the use of raw carrots has a beneficial effect on the condition of the gums. One of the most useful properties of carrots is the ability to strengthen the retina, so people with nearsightedness and other visual impairment doctors recommend eating a large amount of carrots. To do this, carrots are best to squeeze the juice, so the gastrointestinal tract will not be overloaded with fiber. Carrot juice should become an obligatory component of a diet for people with impaired liver and kidney function. It helps to remove small stones from the kidneys and helps to cleanse the liver.

But to get involved in carrots, too, should not be. When consuming a large amount of carrots and carrot juice, the liver processes all carotene in vitamin A, and the skin (especially on the hands and feet) acquires a yellowish hue. This is especially common with an overabundance of beta-carotene in children.

Carrots are just a fantastic vegetable. Thanks to recent studies, that in boiled carrots contains more antioxidants than in raw! But that is not all. After a week of storing boiled carrots, the level of antioxidants increased by 37%. Gradually, this level began to fall, but even after a month of storing boiled carrots, the level of antioxidants in cooked carrots remained still higher than in the raw. Scientists suggest that in the cooked carrots within a week, new chemical compounds are formed, which have even higher antioxidant properties.

Useful properties of carrots are not only its root crops, but also seeds (they contain 14% of oil, flavonoids and daukosterol), flowers (contain flavonoids and anthocyanins) and even tops (contains carotenoids and vitamin B2).
