Salad "Pearl" with caviar is a vivid example of a successful combination of seafood with incongruous, at first glance, ingredients, like sour-sweet citrus, cheese, olives. The classic version of this puff lettuce includes blowing salted salmon and red caviar, but after fantasizing, you can make your own "sea" dish in which the most diverse seafood will be combined in the desired order and volume.

The main secret of this salad is properly prepared squid. Carcasses of these cephalopods are very easy to digest, so that the texture of their pulp becomes rubber and spoils the whole impression of the dish.

Prepared chicken eggs, divide into squirrels and yolks, and grind separately. Frozen shrimps hold in boiling water for 4 minutes, cool and clean. Peel the squid for 3 minutes and cut into strips. Peel the cleared orange on the lobules, free from the films and cut into cubes. Cut the salmon into small pieces. Chop some olives with straw. Grate the cheese on grater. Since the salad is laid out in layers, prepare the individual ingredients, mixing them with mayonnaise dressing. We spread on the dish some of the proteins mixed with mayonnaise. The next layer consists of yolks with mayonnaise. Salmon alternate with olives and cover the remaining fish. Mix the cheese with mayonnaise and lay it on top. We spread oranges, cover them with the remaining proteins soaked with mayonnaise dressing. We decorate the middle of the salad with caviar and quail eggs, along the edges of the dish we spread olives. Let the salad soak for 3 hours, then serve.
