Zrazy of Pumpkin

Zrazy is a traditional popular dish in Polish, Lithuanian, Belarusian, Ukrainian culinary traditions (according to one version it is imported from Italian cuisine), it is an oblong cutlet-roll with stuffing. Initially zraza is a meat cutlet with a stuffing from boiled eggs, an onion-mushroom mixture, cereals, and other options are possible. So to say, a cutlet with a surprise. Modern recipes suggest a different approach: for example, potato zrazy with meat or mushroom filling or zrazy of pumpkin.

Tell you how to prepare zrazy from a pumpkin. It should be understood that at least 2 options are possible: meat zrazy with a pumpkin filling or zrazy of pumpkin mass with stuffing, for example, ground beef.

Pumpkin is the most delicious - scented Muscat, but other varieties will do.

Meat zrazy with pumpkin filling

First, prepare the cutlet mass. Break the slices of bread and put in milk to soak. When this happens, lightly squeeze the bread and let it through the meat grinder (or treat it in a blender) along with the onion. Combine the onions, ground meat and eggs. Add black ground pepper and slightly add. Carefully we'll knead and knock out the cutlet mass on the table. Density is regulated by the addition of flour.

Prepare the filling. Pour the pumpkin on a medium-small grater, as well as cheese. Wipe the grated pumpkin lightly and combine it with cheese. Season with dry ground spices (if you want, you can add garlic to the mixture). Let's mix the stuffing.

We mold the zrazy. We form approximately the same flat oval cakes from cutlet meat mass. At the center of each cake, stepping back from the edges, lay out a portion of pumpkin-cheese filling. Fold-form zrazy, trying to achieve perfection of form.

And at this time the fat in the frying pan has already warmed up. We pan out zrazy (if necessary) in the flour mixture and lightly fry evenly from all sides. Then you can reduce the fire and a little more to protect the zrazy under the lid or, moving them into a fireproof form, to bake in the oven. This dish is well suited for garlic-tomato hot sauce or sour cream-mushroom. Make a dish with herbs, serve broth, rye bread, fresh vegetables or pickles, as well as spicy bitter or berry tincture or vodka.

Pumpkin zrazy stuffed with minced meat

Pumpkin rubbed on a medium-shallow grater, add 1-2 eggs and flour in such quantities that we get a fairly thick mass, from which we will make a cake-substrate. Season with grated nutmeg and red pepper, do not salt, mix. Let the mixture stand, while we're messing around with the filling, maybe the pumpkin will still let the juice out and have to add some amount of flour.

To the minced meat, add the onion and garlic crushed in a blender or a meat grinder, as well as chopped greens and grated cheese. Season with fragrant pepper, coriander, cloves. Add the egg and mix, if necessary, adjust the density of flour.

We form the substrate from the pumpkin mass, wrap the portion of the filling in it, form the sprouting.

Zrazy bread in flour and fry in a frying pan evenly. You can bring it to the finish by covering it with a small fire or bake in the oven.

Under such zrazy are more suitable tender cream sauces, olives, asparagus and light muscat wine.
