The washed eggplants are cut into circles with a thickness of approximately 3 mm. We rub it with salt and let it stand for half an hour. Then we wash off the salt, and we dry the blue ones. The same circles cut and young zucchini. Tomatoes are also cut in circles. But if they are too large, it is better to cut them in half further. Now we prepare the sauce: chop the onions, cut the Bulgarian peppers into small cubes. In tomatoes from the side of the peduncle we make a cross-cut in a cross-cut, we fill them with boiling water, peel the skin, and pulp in a blender. Put onions in a heated frying pan, lightly grease it and pass it until soft, add pepper, stir and cook for 5 more minutes. Add the flesh of tomatoes, salt, pepper, put sugar and mix. On low heat, stew, stirring occasionally for about 15 minutes. At the bottom of the mold we put half of the sauce and lay the vegetables, alternating eggplant, zucchini and tomatoes. The washed spicy pepper is cut into small cubes, we chop the sprigs of parsley and garlic. Mix these ingredients, rub the mixture with vegetables in the form and sprinkle with oil. Cover the form with parchment and bake at a moderate temperature for about an hour. We let the prepared dish take 10 minutes, and then ratatouille, baked in the oven, served with the remnants of tomato sauce.
